Amikor nászút végett USA-ba kihelyezett olasz-magyar kétfős csapatunk megérkezett, gondoltam a nemzeti parkokról és természeti szépségekről áradozom majd. Aztán találkoztam az Alfredó szósszal, és minden megváltozott. Eleinte azt hittem, hogy a a fettuccini (laposmetélt) tészta úgy viszonyul Alfrédóhoz, mint Rómeó Júliához. De aztán hihetetlen felfedezéseket tettem. Emlékeztek Forest Gump monológjára a tengeri rákról? “Meg lehet sütni parázson, főzni, párolni, sütni roston és hirtelen. Van rákvagdalthús, rák kreol módra, gombás rák, serpenyős rák, zsírban sült, olajban sült. Van ananászmártásban, citrommártásban, kókuszmártásban, bormártásban. Van rákleves, rákragu, ráksaláta, rák sültkrumplival, rákburger, rákos szendvics… Ennyi, azt hiszem, más nincs.” Helyettesítsétek be a rák szót Alfrédóval, és adjatok hozzá az Alfredós pizzát vagy tízféle változatban, na, nagyjából leírja az őrületet.
Megkóstoltam az Chiken Garlic Alfredó-t, ami nem mellesleg gombás, ahogyan a mellékelt ábra is mutatja, jó sok vajjal megkent szegéllyel, fél tonna fokhagymaporral csak annyira nehéz étel mintha só helyett őrölt urániummal fűszerezték volna… Dehát mitől lenne ez amerikai konyha ha nincs benne hagyma / fokhagyma és vaj?

Az első napon rájöttünk, hogy az “Italian” cimke a legjobb reklámfogás lehet az itteni ételpiacon, mivel minden fontosabb cikkből van ilyen, szószból, salátából, tésztából, szendvicsből és természetesen kávéból is. Persze mindegyik ismeretlen fogalom Olaszországban. De a legismertebb a fetuccini Alfredo, ami az utolsó útszéli büfétől kezdve a legpuccosabb Las Vegas-i étteremeken át kötelezően van az étlapon. Az észak-amerikai kontinens széltében-hosszában ismert és népszerű szósz születését egy római szakácsnak köszönhetjük, bár az olaszok amíg az óceán e partjára nem veti őket a sors, általában a létezéséről sem tudnak. Aztán felfedezik az itteni szörny szülöttet, és szülőatyját, Alfredót, akinek Alfredo alla Scorfa nevű éttermébe a tengerentúliak vallásos áhitattal zarándokolnak római vakációjuk során.
Az amerikai verziót én egy PizzaHut-ban kóstoltam meg ahol fettuccini helyett fusillival tálalták, sütőben megpirítva a tészta tetejét, csíkokra szelt csirkehússal (felháborítóan olasztalan dolog!) és jó sok fokhagymával a szószban.
Magyar konyhán felnőttnek, ahol a tészta hússal (Mamma mia!) gyakori párosítás, valószínűleg ízleni fog, mint ahogy nekem is. Gombás verziója, vagy parmezán és/vagy Romano sajttal szintén népszerű, de az eredeti olasz recept Alfredótól az alábbi lenne 4 személyre, ahol többek között a fokhagymának a legkisebb nyoma sincs:
400 gr friss fettuccine tészta (laposmetélt)
90 gr vaj (nem margarin)
150 gr parmezán
200 ml tejszín
3 kiskanál apróra vágott petrezselyem,
só, bors
Forró sós vízben az előírt ideig kifőzzük a tésztát, közben egy serpenyőben felolvasztjuk a vajat és hozzáadjuk a reszelt parmezánt, tejszínt, petrezselymet, sót, borsot. A leszűrt tésztát a serpenyőben lévő szósszal alaposan összekerverjük és azonnal tálaljuk. Sokkal egyszerűbb, nem?
ps.: a Bertolli cimke senkit ne tévesszen meg, a nemzetközi Unilever cég tulajdonában lévő márkanévről van szó, semmi köze az olaszokhoz.
