Igazi nápolyi típusú pizzára vágysz otthon? Nincs más teendőd, mint követni az alábbi receptet. A végeredmény vékony, ám a szélén magas és ropogós pizzatészta. Kipróbáltuk. Tökéletes!
Hozzávalók (4 nagyméretű pizzához):
- 600 ml meleg víz (nem forró)
- 1 kg liszt
- 50 gr élesztő
- 6 ek. extraszűz olivaolaj
- 30 gr. só
- 2 kk. cukor
A cukorhoz add hozzá az összemorzsolt élesztőt, majd adj hozzá egy kis meleg vizet. Hagyd állni, amíg hab nem képződik a tetején. Egy kis tálban keverd el a sót szintén egy kis vízzel.
Egy nagy, mély tálba tedd bele lisztet és csinálj lyukat a közepébe. Ide öntsd bele a felfuttatott élesztőt, a sós vizet és a 6 evőkanál oliva olajat. Kezd el összegyúrni, miközben folyamatosan adagolod hozzá a maradék vizet. Amikor összállt, még vedd ki egy kicsit és gyúródeszkán gyömöszköld egy-két percig, amíg egy szép nagy, ruganyos labdaccsá össze nem állt.
Ekkor tedd vissza a tésztát a tálba, takard le egy konyharuhával. Meleg, nem huzatos helyen hagy állni másfél-két óráig, amíg kétszeresére nem dagad.
A sütőt melegítsd elő 250 fokra (hőkeveréses sütő esetén szerintem 220 fok is elég). A pizzatésztát oszd el 4 darabra és tepsiben nyújtsd ki úgy 2-3 mm vékonyra, a szélein hagyd kicsit vastagabbra. (A tészta a sütőben még nőni fog.)
A tetejére a klasszikus recept szerint paradicsomszósz, pici olivaolaj és mozzarella kerül.
A pizza kb. 15 perc alatt tökéletesen megsül.
