Az egyik legeslegjobb dolog Olaszországban a kávé. Na de hogyan ismerje ki magát az egyszeri turista a bárok hosszú kávélapján? Alább összegyűjtöttük a klasszikus kávéfajtákat, lehet válogatni kinek kedve szerint.
Espresso vagy más néven “caffé normale“: Forró, rövid és fekete. Kis tejszínt ne várj a csésze mellett. Ha a mokkáscsésze alján egy gyűszűnyi kávét szolgálnak fel, akkor az nem tévedés és nem is átvágás, az pont az espresso-nak megfelelő standard mennyiség Olaszországban. Az ereje viszont felér egy bögre magyar kávéval. Az összes további kávéköltemény alapja.
Caffé doppio: Kétadag espresso egy cappuccino-s bögrében.
Caffé lungo: Hosszúkávé. Ugyanaz a kávémennyiség több vízzel. Kevésbbé ütős, mint az espresso.
Macchiato: Tejfoltos kávé (macchiato = piszkos, foltos). Az espresso kávéba pár csöpp tej kerül. Mokkáscsészében szolgálják fel. Két alfaja:
Macchiato caldo – meleg, habos tejjel
Macchiato freddo – hideg tejjel
Latte macchiato (Magyarországon előszeretettel becézik “latte”-nak, aminek köszönhető, hogy Amby egyszer Italiában majdnem rendelt egy nagy pohár meleg tejet): A macchiato nagytestvére, a kávéfoltos tej. Nagy üvegpohárban szolgálják fel. Fogyasztása legkésőbb délelőtt 11.00-ig elfogadott Olaszországban.
Cappuccino (vagy “cappuccio”): Közepes méretű bögrében kávé forró tejhabbal. Figyelem, a kávé tejszínhabbal nem capuccino! A sok tejmennyiség miatt ezt is csak délelőtt fogyasztják. Legtöbb helyen megkérdezik, hogy kérsz a tetejére kakóport. Ízlés szerint mondhatunk igent vagy nemet.
Marocchino: Macchiato egy kis csokival (kakaóval), kicsi üvegpohárban felszolgálva.
Caffé corretto: Espresso megbolondítva egy kis alkohollal (grappával, sambucával vagy konyakkal). Jobb helyen megkérdezik, hogy az alkoholt mellé kéred, vagy bele. Ha külön kéred, akkor hoznak neked egy espresso-t megy egy normál adag rövidet.
Shakerato: Tejes jegeskávé jól összerázva, aminek következtében a tetején krémes hab képződik. Ideális nyári ital, ezt elfogadott akár este is inni.
Affogato al caffé: Vanília, mogyoró (torroncino) vagy csokoládé fagylalt nyakonöntve forró kávéval. Kis tálkában adják kiskanállal.
Caffé d’orzo: Malátakávé. A fenti kávéfajták bármelyike elkészíthető belőle.
Decaffeinato: Koffeinmentes kávé. Ideális este, vacsora utáni fogyasztásra.
Bónuszként pedig az édesítőszerek:
- Zucchero bianco: normál fehér cukor
- Zucchero di canna: barnacukor
- Dolcificante: édeske (mesterséges édesítőszer)

A flat white kozelebb van a cappuccinohoz szerintem (adagban pl.), azzal a kulonbseggel, hogy nem a tejhabot, hanem alola a tejet ontik ra (ezert flat). Szerintem nincsen az olasz tipikusok kozott, olaszoknak tul sok lenne benne a tej ;-)
Persze, ezek nem olasz klasszikusok, down under talalmanyra gondoltam :-)

Úgy tudom espresso egy csepp tejjel. De lehet ám, hogy ez csak friuli tájszólás. Majd rákérdezek a kollegináknál.

És adjatok tanácsot, szerintetek melyik a legjobb márka? A csésze a képen elég egyértelmű :)) Én Lavazzát szeretem, de érdekelne a véleményetek.
Hát nehéz tanácsot adni, mert kinek mi… nekünk is a Lavazza a kedvecnc, abból is a d’oro (arany). (Meg mostanság egy kolumbiai kávé, de azt nem írom ide, mert nem illene az olasz profila :-)
Aztán nagyon jó még az Illy. Személy szerint a Segafredo nem jön be annyira.
A legleslegjobb persze a Café Ambrosianoban frissen pörkölt és őrölt kávé, csak azt kicsit macerás beszerezni.
Sziasztok! Barista vagyok, talán tudok segíteni “jó kávé”-ügyben.
A Lavazza., a Segafredo de még (a magát egyébk. a “világ legjobb kávéja”-ként hirdető) Illy mind-mind gyenge középvonalas keverék, az eszpresszó-technológiával (azaz: 9 Bar nyomás, 88-92 °C víz, 7-9 g tömörített kávépogácsa, 25 másodperces átfolyási idő, 30 ml kész eszpresszó) nem mindig képes azt adni, ami a kávé lelke, azaz egy igazi ESPORESSO ITALIANO.
Akit érdekel, bátran tudom javasloni a következő kávékat akár otthoni fogyasztásra is (ezek valóban csúcsminőségű eszpresszó-alapanyagok!, és árban nem drágábbak a Lavazza, vagy Illy “vonalnál”…): Molinari, Mokambo, Vergnano, Zicaffe, Pascucci.
Ha valaki kicsit is el szeretne mélyülni ebben a témában, hát akkor egy-két tipp, nézzetek körül alaposan itt, érdemes…

Majd jól visszavágok a tejes teával meg a mentaszószos báránnyal. :)))
annyit korrigálnék, hogy az nem igaz, hogy a hosszú kávé nem annyira ütős, mint a presszó. 1 deci hosszúkávé nem üt annyira, mint 1 deci presszó. A hosszú kávét úgy csinálják, hogy tovább megy a kávéfőző. A főzésnek nyilvánvalóan az elején jön ki a kávé erejének a java, de attól hogy még több víz megy keresztül a kávén gyengébb semmiképp nem lesz, sőt koffeintartalma növekszik. A hosszúkávéval tehát több koffeint veszünk magunkhoz mint a presszóval.
Hűha… akkor én bajba leszek… nem szeretem a kávét…
