Ha már a héten ennyire fókuszba került nálunk az olasz konyha, megosztok veletek egy eredeti olasz receptet, amit imádok. “Parmigiana di melanzane” vagyis parmezános padlizsán, amit lehet fogyasztani főételként vagy kisebb adagban köretként is. Mint az olasz receptek általában, ez is pofonegyszerű (bár időigényesebb, mint mondjuk a jól bevált “carbonara”).
Hozzávalók:
1 kg padlizsán
1 kis fej hagyma
500 gr paradicsompüré
150 gr reszelt parmezán
200 gr mozzarella
néhány levél bazsalikom
olivaolaj
só, bors
A padlizsánt hosszában 1/2 centis szeletekre vágjuk, besózzuk és 30 percre állni hagyjuk. Amikor már kezd levet ereszteni, gyöngyözik, akkor leitatjuk róla a sót és megszárogatjuk. Mindegyik szeletet egy-két perc alatt olajon (én teflonserpenyőben, pici olajon szoktam – nem úgy mint a lenti videóban) átsütjük, illetve ha hiperegészséges olasz étel a célunk, akkor olaj nélkül grillen is el lehet a sütögetést végezni.
A szószhoz megpirítjuk a felaprított hagymát egy kis olivaolajon (ínyencek adhatnak hozzá fokhagymát is), hozzádjuk a paradicsompürét, sót, borsot, bazsalikomot és összeforraljuk.
Egy kisméretű, magasfalú tepsi alját beparkettázzuk padlizsánszeletekkel, amire elterítünk egy kis szószt, majd szeletekre vágott mozzarellát és parmezánt vegyesen. Aztán újabb padlizsán, szósz, sajt réteg és ezt mégegyszer elismételjük. Arra érdemes figyelni, hogy a tetejére elég sajt kerüljön, hogy befedje a művünket, így amikor, megsül, akkor a tetején szépen pirult sajtréteget találunk majd.
Az egészet berakjuk a sütőbe 200 fokon 30 percre. Forrón lehet tálalni, de még jó lesz másnap is (ha marad belőle).
