Az év utolsó estéje újabb kérdést tartogat az Olaszországban ünneplők számára – Cotechino vagy zampone?
Ez esetben a döntés csak jelképesen gusztus kérdése, hiszen tartalmában ugyanarról a dologról van itt szó, csak a külcsín változik. Sokan mondják, hogy ők bizony meg tudják különböztetni ízre is, melyik melyik – előrebocsátom, hogy nem tudok személyes tapasztalatról beszámolni (azon kívül hogy látvány és illat).
Tehát, cotechino és zampone – az újév első napján hagyományosan lencsével fogyasztott húskészítmények. Mindkettő darált sertéshúsból, fűszerekből és egyéb disznóalkatrészekből készül, csak míg a cotechinot hagyományosan disznóbélbe töltik, a zampone a malac mellső, kikapart lábába kerül visszatöltésre. Innen is a neve – a „zampa” az állatok végtagját jelenti. A lencse mellé egy jó kis főtt disznóláb vagy nagyra nőtt főzőkolbász… döntse el ki-ki maga.
volt szerencsém olasz o.-ba tölteni már a karácsony-szilveszter-újév időszakot házias környezetben(rokonságból kifolyólag) úgyhogy tudom, milyen ez a töltött disznóláb élőben. Mondjuk megkóstolni már nem volt bátorságom;)
A lencsét sem eszem meg. Szerencsére, legalábbis ilyen formában a zampával sem találkoztam. biztos finom, de ahogy kinéz…

Hjjjja,..egy-egy magyarhoni disznòoldoses alkalmaval(es az azt koveto teli honapokban) hogy mi nem kerulet az ember bendojebe(jopar elettel ezelott ;-)…),de szerintem,ha valaki a mi magyar kocsonyankat (bendo)be birja kebelezni(mindennemu “disznosagaval”egyutt),akkkkor,a fenti etek se fog majd ki rajta,…szoval a kommesztibilitas garantalt a fizikuma ellenere :-)!!!!
Nekem jöhet a lencse is meg a zampone is :-) Igaz ma estére én főzöm a barátkonak a lencsét amúgy jó magyarosan: füstölt oldalassal és tejföllel!
Láttam már ilyen cuccost párszor, a darálthús okés, de valahogy nem vonzott sosem. Igaz, még a dobozos csülköt sem volt merszem kipróbálni.
Disznóbélbe… miért, mi a hurkát, kolbászt mibe töltjük? :) Ez a láb-dolog meg jópofa. :)
Sosem hallottam még ezekről a kajákról, de így első “hallásra” semmi extra. Simán jöhet.
@Zsic stimmt, én nem is a disznóbélen akadtam fönn, sőt azt sztem mindenki tudja, hogy a műbeles nem az igazi :) Amikor kicsik voltunk disznóvágáson ott tolongtunk hogy ki fújhassa fel közülünk a belet a töltéshez :D
Boldog Újévet mindenkinek! Átment a kezem alatt kb 500.000 db cotechino és zapone. 3 hónapot dolgoztam egy gyárban, s láttam eleget.
Szerintem nem a bőr vagy a bél a gond, hanem ami benne van. A legrosszabb tesco gazdaságos konzerv löncshús van olyan rossz mint ami ebben a két remekműben található.Ingyen sem kéne amíg van jobb ennivaló is. :)
