“Emilia Romagna-ban jókat eszik az ember” – válaszolta olasz barátunk D., miután megérdelkődtük tőle, hogy vajon minek utazunk egészen Pármáig egy ebédért.
A Tre Ville Hosteria-t találomra az internetről választottuk, merthogy igen jó véleményeket írtak róla az eddigi vendégek. Ez az étterem Parma város határában található, úgy eldugva, hogy az ember nem is gondolná, hogy érdemes oda betérni. Pedig de :-)
A három órás hedonizmus egy felvágotakkal teli tállal kezdődött (antipasto di terra, avagy “földi” előétel). Ezt semmiképpen nem szabad kihagyni, Párma nem véletlenül híres a prosciutto-járól. Túlzás nélkül állíthatom, hogy eddigi Olaszországi tartózkodásom alatt itt kóstoltuk a legzamatosabb, legkülönlegesebb szalámikat. (Amik egyébként házi készítésűek, és ott lógnak a padláson az érett rudak arra várakozva, hogy felszolgálják őket.)
Szerencsére nem engedtem, hogy a józan eszem diktáljon (ami azt szajkózta, hogy előétel és főfogás is bőven sok egy olyan lyánykának, mint én), és a többiekkel együtt rendeltem első fogást is. Olyan “ravioli in brodo”-t ettem, mint még soha! Egészen eddig meg voltam győződve róla, hogy minden ravioli in brodo-nak (húslevesben úszlákó, általában húsos krémmel töltött tésztabatyucskák) ugyanolyan íze van. Hát, kérem, tévedtem. Lehet, hogy nagyon sok ravioli in brodo-t meg kell ennem, hogy újra hasonló élményben legyen részem, de most már látom, hogy érdemes próbálkozni. (Egyébként a többiek is különböző tésztaféléket választottak, és ők is hasonlóan katarktikus élményt éltek át.)
Aztán második fogásnak mindegyikünk más-más húsfélét rendelt, amiket mindannyian szépen körbekóstoltuk. Mindegyik isteni finom és omlós volt a fűszervajas borjúsülttől a töltött fácánig.
És itt abba is hagytuk volna az evést, ha nem pillantjuk meg az étlapon az édességek között a parmezános-körtés krémet karamellás öntettel. (Volt annyi eszünk, hogy már csak egy adagot kértünk 4 kanállal :-). És igen, parmezán sajt íze volt. És édes volt. És hihetetlenül gyönyörűséges ízkombináció volt a forró olvasztott karamellával. Szerintem senki más nem tud ilyet csinálni, csak ők.
A Tre Ville Hosteria egyébként tagja a “Slow Food” nemzetközi szervezetnek, aminek célja jó minőségű, helyben termesztett és természetes alapanyagokból készített ételeket felszolgáló éttermek népszerűsítése, ahol az étel nemcsak szükség, hanem élvezet. (És ez kivételesen nem az egészségmániás olaszok újabb őrülete, hanem azoké akik szeretnek jókat enni.)
Az utolsó meglepetés a számla végösszege volt. Fejenként 27 eurót fizettünk (három fogás+édesség+ásványvíz+bor+kávé), ami észak-olasz viszonylatban igazán jutányosnak mondható.

Igen, Párma nagyon helyes kisváros. A központban van egy kis tér, ami közepkori épületekkel van körbevéve és az embernek tényleg az az érzése, hogy visszarepült az időben 500 évet!
Minden esetre már a kajáért érdemes kitérőt tenni, ha valaki ezen a környéken jár, és ha már ott van ugye az ember, akkor miért ne nézné is meg :-)
Óóó…. ezt a körtés-parmezános-karamelles cuccot feltétlenül ki kell próbálnom! Magamtól biztos eszembe nem jutott volna ilyen :D
