Ha azt kérdezik, mi hiányzik Magyarországról, akkor az első dolog, ami eszembe jut, a tejföl. A kezdeti időkben kétségbeesetten kutattam utána a kisebb-nagyobb bevásárló központok polcain, de ez hiú próbálkozásnak bizonyult. Aztán elkezdtem más megoldásokat keresni. Íme hát az alternatívák.
1. Milánóban a via Brera-n van egy kisbolt, ahol kizárólag külföldi, Olaszországban nem vagy nehezen beszerezhető élelmiszereket árulnak. Itt találtam is német gyártmányú tejfölt. De egyrészt az ára igencsak borsos, 2,5 euró egy másféldecis doboz; másrészt sokkal hígabb és savanyúbb, mint amit otthon megszoktunk.
2. Bergamo közelében élő magyaroktól hallottuk, hogy az ukrán kisboltokban illetve piacokon feltűnő ukránoknál fellelhető az igazi, hamisítatlan tejföl. Na, ezekre az ukránokra eddig Milánóban még nem sikerült rátalálni.
3. Saját gyártmányú tejföl, friss és pasztőrözetlen tejből. A Garibaldi metróállomásnál van is egy tej-automata, ahol lehet pasztőrözetlen tejet kapni. Egyszer vettem is, de végül nem jutottam el odáig, hogy tejföl legyen belőle. Túl macerás és nem vagyok biztos benne, hogy a megfelelő eredményre vezet. Ha valaki megpróbálkozik vele, akkor kiváncsian várom a tapasztalatokat!
4. Sima tejszín és natúr joghurt elegye. Kipróbáltam, de sem az állaga, sem az íze nem kielégítő, egy az igazi tejfölhöz szokott magyar embernek.
5. Crème fraîche, az Esselungában általában kapható, a nemzetközi szakirodalom szerint a tejfölhöz hasonló tejtermék. Szerintem is hasonlít, de még nem az igazi. A tejfölnél sűrűbb, zsírosabb és kissé sárgás színe van. Nem véletlenül hívják az olaszok Burro di Normandia-nak, vagyis “normandiai vaj”-nak. Ha nincsenek túl nagy elvárásaink, akkor valóban lehet tejföl helyett használni.
6. Amerikai-görög barátnénk ismertett meg minket a görög joghurttal, ami – mint kiderült – a legtöbb nagy szupermarketben beszerezhető. És most jön a katarzis! Ez az, ami valóban legközelebb áll a mi tejfölünkhöz. Talán egy picit savanyúbb, de ugyanolyan hófehér, ugyanolyan krémesen sűrű és pont ugyanúgy lehet felhasználni. Az ételekbe főzve észre sem lehet venni, hogy nem igazi tejföllel van dolgunk.
(OFF: Ha már görög joghurtnál járunk, akkor muszáj megemlítenem, hogy leöntve egy kis mézzel és nagyobb darabokra tört dióval meghintve egyszerűen isteni! Nagyon finom, egészséges és szemet gyönyörködtető édesség. Ha egyszer rengeteg tejfölre teszek szert, akkor ki fogom próbálni azzal is.)
7. És persze a legjobb megoldás, hozatni az idelátogató rokonokkal és barátokkal igazi magyar tejfölt otthonról. Csak szervezés és türelem kérdése.*
