Mennyiségek 2 főre
1 kis fej hagyma
250 gr fehér nagyszemű rizs (carnaroli)
1-2 dl pezsgő
Petrezselyem vagy zellerzöld
Parmezán, só, bors
Aprítsd nagyon vékonyra a kis fej hagymát és pirítsd meg olajon vagy vajon. Amikor üvegesre pirult, dobd rá a rizst, párold kicsit együtt, majd öntsd fel egy-másfél deci pezsgővel.
Amint felforrt a pezsgővel és felszívta azt, lassított tűzön decinként adj hozzá vizet vagy zöldséglevest amíg a rizs elkészül. Vigyázz arra hogy ne legyen túlfőtt (túl sok lé), ragacsos (túl hosszú főzési idő), általában 15 perc elég. Kevés apróra vágott petrezselyem vagy zellerzöld is mehet bele közvetlen mielőtt leveszed a tűzről.
Tálaláskor frissen reszelt parmezánsajttal az igazi.
