A Magyarországon többnyire ismert Carbonara spagetti megcsúfolása a
jól ismert olasz specialitásnak. Ezennel lerántom a leplet és
megosztom az igazi, eredeti receptet. (Ez volt a legelső olasz étel, amit megtanultam elkészíteni, miután kijöttem Olaszországba.)
Pofonegyszerű, és gyakorlatilag annyi idő kell hozzá, amíg megfő a tészta. Egyszerűsége azonban ne tévesszen meg senkit, hihetetlenül finom! Bármennyit is készítek belőle, sosem elég.
Hozzávalók 4 fő részére:
- 20 dkg pancetta kockázva (jó húsos szalonna)
- 250 g spagetti (bár én a metélt tésztát szeretem legjobban)
- 4 db tojás
- parmezán sajt (jobb otthon reszelni, mert akkor nem olyan száraz)
- feketebors
Egyszerű és nagyszerű!
Amíg a tészta fő, egy serpenyőben lassú tűzön megsütöm a pancetta kockákat (ne piruljon meg, inkább csak “üveges” legyen).
Egy külön tálban felverek két egész tojást és kettőnek csak a sárgáját adom hozzá. Jól megborsozom, hogy jó fekete legyen a massza (állítólag ezért hívják carbonaranak, azaz “szénégetőnek”), majd beleszórok egy nagy marék parmezán sajtot. (Só nem kell, mert a szalonna és a parmezán elég sós ízt ad majd.)
Ha a tészta kész, leszűröm és hozzákeverem a sült szalonnát és a nyers tojásmasszát. Kész!
Nem kell utána se sütni, se állni hagyni, azonnal neki lehet ugrani.
Akkor lesz jó a carbonaránk, ha tocsog – a tojásnak nem szabad megsülnie a tésztán. Ha valaki nagyon ínyenc akar lenni, akkor a felvert tojáshoz adhat egy kis tejszínt, de nem fontos. A végén viszont a tányérra tálalt spagetti tetejére szoktam szórni még egy kis parmezánt. Így még tetszetősebb és különben is sajt mániások vagyunk :-)
