Szombaton sikerült főnökasszonyi felügyelet mellett ehető állapotban reprodukálni egy egyszerű, de annál ízletesebb vongole receptet. Zsuról ugyan nem hallottam azóta, de remélhetőleg jól van ;)
Tehát, a kagylós tészta két főre:
A vongole kagylókat be kell áztatni minimum 1 órára, legalább háromszor vizet cserélve rajtuk, hogy kimosódjon a bennük lévő homok.
Felraksz egy lábos vizet sóval és pár csepp olivaolajjal a tésztának forrni.
Két gerezd fokhagymát felvágsz, de nem apróra, olivaolajban lassú tűzön megpirítod, majd rárakod a kagylókat (víz nélkül) és fedő alatt lassú tűzön sütögeted őket, amíg mind ki nem nyílnak (5-6 perc).
Egy deci fehérbort hozzáöntesz a kagylókhoz, megszórod borssal és petrezselyemmel, majd addig főzöd, míg a bor nagy része elpárolog.
Ha a tészta készen van, akkor tálalod és a tetejére rakod a kagylókat.

Hogy mennyi kagyló kell hozzá? Hát súlyra 1 kilót saccolok, de nem tudnám pontosan megmondani, mert a helyi PAM-ban előre behálózott adagonként veszem.
Azt viszont tudjuk, hogy 174 darab kagyló kellő mennyiség 4 embernek. Ezt meg onnan tudjuk, hogy megszámoltuk! Fogadtunk. Megint. És megint vesztettem. Viszont vidám estém lett a teljesített 1 deci vodka után :-)
(Egy apró javaslat, ha megpróbálkozik valaki az elkészítésével: A kagylókat ne főzzétek túl sokáig, a bor beleöntése után még max. 5 percig. Többek között azért szeretem ezt az ételt, mert nagyon gyorsan kész van. Na, meg azért mert finom :-)
